Humans have used plants since ancient times for their medicinal and nutritional properties. Hildegard of Bingen, one of the most relevant medieval figures, mystic, poet, philosopher, naturalist and composer of the 12th century, knew the power of plants to alleviate and cure diseases, as well as to maintain what today we would call a balanced diet and she wrote about it in her books.
